Happy St. Patrick’s Day

I hope you have a wonderful St. Patrick’s Day!

To keep it “green”on this special day, I wanted to share my delicious Key Lime Tart recipe! Don’t hesitate to try this recipe, it is so simple…but, oh so good! The crust is
a favorite, because it is so easy. I like to serve them in individual tart
pans, but it is fabulous in a 9 in. pie dish as well.

I know great moms who cook everything green on this special day, and I really
admire those who can start the day with green eggs, green
pancakes & green milk or juice.

But for me, other than broccoli and a fabulous green salad or corn beef and cabbage,
this is about as far as I go for this Patty’s Day Celebration.

It is the perfect dessert for this St. Patrick’s Day!

Key Lime Tarts

Tart Crust:
2¼ c. flour
½ c. brown sugar
1 c. butter, softened
1 c. powdered sugar
¼ tsp. kosher salt

Preheat oven to 350°. Spray mini spring form pans or baking dish with cooking
spray. Make crust by combining flour, sugars and salt in a large mixing bowl.
Cut in butter to make a crumbly dough. Press dough into prepared pans, building
up dough around the edges to form mini pies. Bake for 10 to 15 minutes.

Key Lime Filling:
3 eggs
4 oz. cream cheese
6 oz. frozen whipped topping
2 c. sugar
¾ c. flour
lime zest
½ c. fresh lime juice
5 drops green food coloring

While crust is baking, make filling. With a whisk, blend eggs, sugar, fresh lime juice,
cream cheese and flour together. Fold in food coloring and blend well. Pour filling over
baked crust and return to oven for 15 to 20 additional minutes. Remove from oven and
cool. Refrigerate until serving. Serve cold with a dollop of frozen whipped topping and
sprinkle with fresh lime zest.
