#2 Eggs, Let’s get crackin…

Eggs are considered a super food—the whites are protein rich, while
the yolks contain a precious water-soluble nutrient called choline,
which improves memory, focus, and overall cognitive performance.
I regularly eat two scrambled eggs every morning. They are such a
great source of protein and start my day off perfectly. It is as if I
can feel my engine rev up when I fuel it with the right stuff. Perfect
way to start off your day!When I was younger there were so many
studies, or the fad for a while was NOT to eat eggs everyday.
Crazy! Years ago, before all the additives and preservatives
were added to everything, our grand parents and their
parents ate eggs everyday. Eggs were a staple and
eaten in some way at every meal.


Mini Egg Souffles

18 eggs
½ tsp. coarse black pepper
1 c. fresh mushrooms, sliced
½ c. milk or cream
6 green onions, chopped
2 c. sharp cheddar cheese, grated
1 tsp. onion salt
1 red bell pepper, diced
18 Mini Babybel™ cheese rounds, diced
½ tsp. garlic salt

Preheat oven to 400°. In blender, combine eggs, milk, onion salt, garlic
salt and pepper. Grease individual size serving molds and pour egg
mixture 2/3 full in each mold. Add equal amounts of green onion,
red pepper, mushrooms, cheddar cheese and Babybel™ cheese in
each mold. Bake for 14 to 16 minutes. Serve.
