Sometimes the simplest ingredients blend together and create the most
sensational salads. I like to experience the full flavor of each ingredient.
So, I always say… less is better. The richness of the bacon compliments the
sweet flavor and fresh texture of the pears. Crisp, clean lettuce, and the
mild flavor of the dense feta cheese, all combine to make this
simple salad a real winner.
Feta Pear Salad
1 lb. bacon, cooked
2 hearts of romaine
2 pears, sliced
12 oz. feta cheese, crumbled
Cook bacon and set aside. Rinse and cut romaine into bite-size pieces; place in a
serving bowl. Before serving, core and slice pears. Crumble feta cheese. Cut
bacon with scissors into 1-inch pieces. Toss pears, feta cheese
and bacon with romaine. Chill. Serve with Sweet Basil Dressing.
Sweet Basil Dressing
½ c. vegetable oil
1/8 tsp. coarse black pepper
½ c. sugar
½ tsp. dry basil
½ c. apple cider vinegar
¼ tsp. kosher salt
¼ tsp. dry mustard
Combine all ingredients together and blend well. Chill before serving.
