# 4 The MAGIC of Walnuts!
You probably already guessed that walnuts are a rich source of omega-3 fatty acids
(health fat), but did you know that they’re also extremely high in antioxidants,
which promote brain function? So sprinkle them on salads, your morning cereal,
or grab a handful for a brain-boosting crunch.
I love most nuts, but walnuts were a favorite of my mother’s, so I grew up eating them
often. I love to candy them, to add them to any salad to make it seem a little special.
I sometimes crush them in pastry or graham cracker crusts to deepen and
enrich the flavor. I love them mixed with craisins, or chopped and
folded into tuna or chicken salad.
They are fabulous chopped and mixed into granola, even when I am using other nuts.
I always roast them in the oven, sometimes sugared, but I crush them and sprinkle
them on cookies, sweet breads or frosted cakes. Walnuts are not just empty calories…
they actually have some power behind them. We hope you enjoy this salad…it is the
perfect season for strawberries, and paired with walnuts your family and friends
with love this amazing combination of flavors. Take the time to add these
powerful little nuts and transform the ordinary into the extraordinary.
“How bout them nuts?”
Strawberry Spinach Salad
2 c. walnuts
1 red onion, chopped
1 c. Craisins™
1/3 c. sugar
15 strawberries, sliced
8 oz. feta cheese
2, 10 oz. bags baby spinach
2 avocados, diced
Toast nuts in a skillet, sprinkle with sugar over low to medium heat and stir
until sugar crystallizes. As the sugar melts it coats the nuts. Spread walnuts
on jelly roll pan and let cool. In a large serving bowl, combine baby spinach,
chopped red onion, sliced strawberries, diced avocados, Craisins™, sugared
pecans and feta cheese. Toss salad ingredients together and chill.
½ c. strawberry jam
¼ c. olive oil
1 ½ c. strawberries, with stems
¼ c. water
½ c. balsamic vinegar
salt and pepper to taste
Mix all ingredients in a blender. Chill before serving.
