# 6 Beets, You’re going to ‘dig’ these details…
OK, so I must say, again this is one of my Mom’s favorite things. We grew up enjoying
pickled beets right out of our garden. I remember digging them up, scrubbing them
clean, and filling the jars, mixing the pickling juice and anxiously awaiting the first
opened jar to sample one of our favorite things. But whether you Roast them, steam
them, pickle them, or bake them—whatever you do with beets, when you eat them
you’re getting a blast of genius to your brain in the form of natural nitrates. This root
veggie actually encourages fresh blood flow to the brain, which in turn,
boosts mental performance.
If you are already a beet lover, then you may know some of these important tips about
beets. But if not this is interesting info and might give you that little nudge to see if
you could become a beet lover after all. You already know that beets are an
extremely nutritious food choice that just happens to be extremely delicious.
You also know that beets are an insane source of vitamins and minerals. But did
you know that beets are the second largest source of sugar, after sugar cane? I didn’t
realize that, but it makes perfect sense since they are almost addictive. I love them,
I crave them…I like them warm fresh out of the jar, I love them chilled with cottage
cheese, salt and pepper. I love them on any salad or just right out of the can!
