Blueberry Peach Cobbler!


It is peach season… and we love to share new recipes that include a few of our favorite things. We also love, love, love, ice cream at our house, so combining these makes this beautiful combination
perfect this time of the year.

This Blueberry Peach Cobbler is not only beautiful to serve, but this special combo served warm, is one of those recipes that have been requested over and over again throughout the years. Try it and see
if it will become one of your family or friends favorites at this
time of the year!

Blueberry Peach Cobbler

10 peaches
3 tbsp. cornstarch
1½ c. sugar
1½ c. blueberries
½ c. flour
¼ c. butter, softened
Preheat oven to 350°. Wash and peel peaches; cut into small
pieces and place in a mixing bowl. Add rinsed blueberries.
In another bowl whisk cornstarch, flour and sugar together.
Cut in butter to form a crumbly mixture. Add mixture to
peaches and blueberries and lightly fold together. Spread
mixture in a 9 x 13 glass baking dish.

Cobbler Crust:
1 c. flour
1½ tsp. baking powder
¼ c. butter, softened
1 c. sugar
1½ tsp. kosher salt
2 eggs
1 tsp. ground cinnamon

Combine the flour, sugar, cinnamon, baking powder and
salt in a bowl. Cut in the butter until the mixture looks like
coarse cornmeal. Beat eggs and add to mixture. Mix well.
Drop spoonfuls of topping on peach and blueberry mixture;
as it bakes it will spread out. Bake for 40 to 50 minutes or
until topping is lightly browned.

Top with your favorite Ice Cream and serve.
