Creamy Banana Trifle……delish!

This is one of those quick and easy…but elegant desserts that everyone
adores. Who doesn’t like bananas? Right? They are nutritious, really
high in fiber, and a great source of vitamin C.

The first “JOB” or little business I ever started, was when I was thirteen
years old.  I loved to bake bread and I loved Banana Cream Pie.  So as soon
as school got out, I baked a few loaves of wheat bread and also made a large 13-inch Banana Cream Pie (with homemade pastry) that was piled
about 4-inches high with sweet vanilla pudding, freshly sliced
bananas and rich whipped cream.

I then went door-to-door, taking orders to sell my freshly baked goods. Well,
I didn’t get very far down the street before I had as many orders as I could
handle, and so my love affair with baking began…I had regular, weekly
customers that summer, that anxiously waited for me to deliver warm
loaves of bread and beautiful Banana Cream Pies each week.

It was so much fun. I learned to work hard, prioritize my time and meet
deadlines. I often had to put off fun with friends because I had more pies
to bake, but all in all, it was such a great season in my young life.

I love my recipe for Creamy Banana Trifle, it is a total shortcut from banana cream pie but tastes just as good!

Creamy Banana Trifle

4 c. graham crackers, crushed
¾ c. butter, melted
¾ c. sugar
1 c. pecans, chopped

Preheat oven at 350°. In a mixing bowl combine crushed graham crackers, melted
butter, sugar and pecans. Mix well and spread out loosely on a jelly roll pan. Bake
for 12 to 15 minutes. Let cool and break into crumbly pieces. Set aside.

Banana Filling

2 5.9 oz. instant vanilla pudding
4 c. 1% milk
16 oz. frozen whipped topping, divided
6 bananas
¼ c. pecans, chopped for garnish

Whisk together instant vanilla pudding mixes and milk. Stir until smooth.
Place in refrigerator for 10 minutes. Fold in about 12 oz. of frozen whipped
topping, saving some for garnish. In the bottom of each dessert dish place a
layer of crumbled graham cracker mixture; followed with a layer of pudding.
Top with sliced bananas and crumbled graham crackers mixture. Repeat. Top
with frozen whipped topping and sprinkle with chopped nuts.
Chill before serving.
