I have to take a break from all of this Halloween Fun and share this fabulous
recipe that I made for dinner last night. This is the perfect time of the year
for this Harvest Chicken and Yams! It is absolutely…out of this world.
It is packed with all kinds of goodness. Fresh spinach and Swiss cheese, with
delicious layers of savory, tender chicken and flavorful yams.
Unbelievably delicious and oh, so pretty to serve!
Harvest Chicken and Yams
4 chicken breasts,boneless, skinless
16 oz. Swiss cheese,block
4 sweet yams
10 oz. fresh spinach
2 tbsp. granulated chicken bouillon
½ tsp. salt
1 tsp. coarse black pepper
¾ c. white cooking wine
½ c. heavy cream
2 tbsp. dried chives
Preheat oven to 325°. Cut each chicken breast into three thin slices. Place in
Ziploc® bag and tenderize the pieces on both sides using a meat mallet and
set aside. Cut Swiss cheese into thin slices. Peel and slice yams into large
round pieces. Spray a9 x 13 pan with cooking spray.
Begin with a layer of yams; fit tightly together and follow with a layer of
tenderized chicken pieces. Cover with cheese slices and all of the spinach.
Repeat with yams and chicken, top with cheese. Sprinkle with granulated
chicken bouillon, salt and pepper. Pour white cooking wine and cream
over entire dish. Finish with chives and coarse black pepper. Cover with
aluminum foil. Bake for 50 to 60 minutes. Cut in squares to serve.
