This is one of those simple recipes that can be transformed into something completely different. I have been making this soup for years…it is one of my younger daughter
Chlo’es most favorite things. I was making this soup one day last week when it
is was raining cats & dogs…we were chilled, and felt like something warm and
delicious. I love this recipe because it is an easy 30 minute meal as well.
Often, if I don’t have exactly every item, I go through my vegetable drawer
and can easily use anything that is in there to make the perfect blend.
But we enjoyed the soup so much, that a day or two later we wanted it again….but just before I added all of the water and bouillon, I took a little nibble. Well it was so……..
delish, I decided to just use it as a filling for lettuce wraps. It was so simple, hearty
and made such an easy lunch. We ended up eating it a few days in a row. Then, the
last little bit of it I made into a simple soup adding a few cups of chicken broth
for Chlo’e to have for an after school snack. She just loved it.

Turkey Bean Soup
1½ lbs. ground turkey
1 yellow onion, chopped
15.25 oz. can Kidney beans, drained
15.25 oz. can black beans, drained
1½ c. frozen white corn
1½ c. green beans, chopped
1 lg. tomato, diced
5 tbsp. granulated chicken bouillon
2 qt. water
½ tsp. crushed red chili flakes
½ c. flat Italian parsley, minced
1 tsp. onion salt
½ tsp. coarse black pepper
In a large pot sauté ground turkey, add onion and sauté until turkey is cooked. Add kidney beans, black beans, corn, chopped green beans and diced tomato. Sprinkle chicken bouillon over turkey and vegetables. and fold in water. Add red chili flakes, parsley, onion salt and pepper. Stir together well. Simmer for ten minutes and serve.
