We love peppers……… we love them raw as a snack, we love them oven roasted as a side dish, but we especially love to grill them. This is one of our favorite ways to prepare and share them. This little recipe can be made ahead, and taken to any outdoor gathering, and cooked on the grill at the very last minute. Or sometimes, I oven roast them. Where about halfway through the baking time, I take them out, stuff them and return them to the oven for a few more minutes. Perfect!
But seriously……….this recipe is a must, this holiday weekend!

Mini Mozerrella Peppers
24 mini multi colored bell peppers
2 tsp. olive oil
8 sticks mozzarella cheese
1 tbsp. garlic pepper
Clean bell peppers and cut out the stems of each mini pepper. Carefully remove seeds so peppers remain whole. Cut cheese into thirds and stuff into the peppers. Thread about 3 peppers onto each skewer stick, depending on the size of your mini peppers. Brush peppers with olive oil and season with garlic pepper. Grill on each side for 2 to 3 minutes or until cheese melts, being careful not to allow the cheese to melt out onto grill. Serve hot off the grill.
