MONSTER MASH…Guac & Chips!


When we were working on this chapter, it is was so fun trying to come up with
clever names for the recipes. Everyone needs a few great TRICK or TREATS
to share this month as we gather with ghosts and goblins to celebrate Fright Night!

MONSTER MASH, will become one of those traditions you will love to share
at work, school, or when gathering on Hallows Eve.



2 ripe avocados
½ red onion
2 tbsp. cilantro
1 lime, juice
½ tsp. kosher salt
½ tsp. coarse black pepper
1 jalapeno pepper
1 sm. zucchini, cored and minced
1, 11 oz. pkg. blue corn tortilla chips

Cut avocados in half. Remove pit. Scoop out avocado from the peel and place
in mixing bowl. Using a fork, roughly mash the avocado. Peel and dice onion
and finely chop cilantro. Slice lime in half and squeeze juice over avocado.
Add onion, cilantro, salt and pepper. Remove stem and dice half of jalapeno
pepper with seeds. Fold into guacamole.

Add remaining diced jalapeno with or without seeds depending on desired
heat. Core and finely mince zucchini and fold into Monster Mash Guac.
Cover with plastic wrap directly on the surface of the guacamole to prevent
oxidation from the air. Refrigerate. Serve with blue corn tortilla chips (as pictured).
