I don’t know about you and your family, but we could eat Salsa at every
family gathering. Fresh Salsa makes the most wonderful appetizer, and
all the kids, both young and old, gobble it up. We love all different kinds of
salsa, but this recipe is simple and can be used to enhance so many recipes.
We love it on grilled chicken or fish, scrambled eggs, grilled veggies,
steamed rice, tacos, cheese quesadillas, grilled potatoes, and more.
This is just another great recipe idea for a great gift in a jar for
neighbors, family, and friends!!!
FRESH SALSA
1 bunch cilantro
1 red onion
½ c. olive oil
1/3 bunch parsley
1 stalk of celery
½ c. white vinegar
½ green bell pepper
8 Roma tomatoes
½ c. water
Mince cilantro and parsley; set aside. Dice green pepper,
onions, celery and tomatoes. Add to cilantro and parsley.
Combine olive oil, vinegar and water and blend well. Pour
over salsa to marinate. Chill in refrigerator and serve.
