This is a recipe that you will love to share with family & friends any time of
the year, but in the next few days, take the time to prepare something special
when you gather to ring in the New Year! Or, it is perfect to nibble on while
you are enjoying your favorite team tomorrow. ENJOY!

Rosemary Cheese Pastry

1 17.3 oz. pkg. frozen puff pastry, 2 sheets
¼ tsp. coarse black pepper
1 egg white
1  bell pepper
8 oz. goat cheese
1 white onion
½ tsp. dried rosemary
2 tbsp. olive oil
balsamic vinegar, garnish
¼ tsp. kosher salt

Thaw puff pastry package in refrigerator. Preheat oven to 400°. Spread
out thawed puff pastry sheets on jelly roll pan and brush with egg white.
Bake for 7 minutes. Peel and slice onion. Heat olive oil in a skillet over
medium-high heat. When oil is hot, add onion slices, salt and pepper.
Stir onions while cooking for 2 to 3 minutes. Arrange onion slices and
scatter ¼ teaspoon-size scoops of goat cheese over each puff pastry.
Top with rosemary and bake 5 to 7 minutes or until golden brown.
Serve with your favorite balsamic.
