White Chocolate Cheesecake

We love anything chocolate…and this is one of those perfect recipes to try, even if
you have never made cheesecake before. . .It is basically a NO FAIL cheesecake
for sure. The white chocolate adds a depth and richness to the cheesecake
filling to make it simply delicious!

White Chocolate Cheesecake from The Gathering of Friends


White Chocolate Cheesecake

2 c. Oreo™ cookies, crushed
½ c. butter, melted
2 4 oz. Ghirardelli white chocolate baking bars
2 8 oz. pkg. cream cheese
1 c. sugar
1 tsp. pure vanilla extract
3 eggs

Preheat oven to 325°. Remove centers from cookies and place just the chocolate
cookies in a large Ziploc™ bag. Crush with a rolling pin. Add melted butter to
crumbs in bag and combine. Press crumbs into a 9-inch round springform pan
or a flower-shaped baking mold (as pictured).

Chop white chocolate bars into chunks and place in a glass bowl. Microwave for
20 seconds at a time, stirring after each time, until the chocolate is smooth and
evenly melted. Cool for 5 minutes. Combine cream cheese, sugar, vanilla and
eggs in a medium-size mixing bowl and beat together with an electric mixer.
Add melted chocolate and beat until well combined.

Pour cheesecake mixture over cookie crust and bake for 50 to 60 minutes or
until center of cheesecake is set. Remove from oven and refrigerate until serving.

If using flower-shaped baking mold, slice into 4 equal parts to create 4 heart-shaped
pieces. Serve with Sweetheart Strawberry Sauce.

Helpful Hint: Line pan with parchment paper for easy removal.

Sweetheart Strawberry Sauce

3 c. strawberries
1 c. sugar
¼ c. water

Rinse, remove stems and slice strawberries. Combine ingredients together in
a small saucepan. Cook sauce for 15 minutes or until desired thickness is achieved.
Serve over White Chocolate Cheesecake.
