Simple Salads make for leaner days ahead!


If you are anything like me….I am feeling the effects of winter’s delicious
comfort foods. Spring always make me feel like I want to simplify
dinnertime and eat lighter evening meals. Wishful thinking!!!

So simple salad ideas like this fabulous Caprese Salad are going
to help me shed a few unwanted pounds…minus the Parmesan Cheese Cups.
Although they make a wonderful presentation, and they are perfect for
entertaining, it is the delightful combination of fresh basil, mozzarella
balls, tomatoes and my special Balsamic reduction.
You have got to try this one!



Caprese Salad

½ c. fresh basil, minced
2 c. grape tomatoes
3 c. mozzarella balls, small

Toss basil, mozzarella balls and tomatoes together and fill Parmesan
Cheese Cups with Caprese Salad.

Parmesan Cheese Cups
3 c. fresh Parmesan cheese, grated
½ c. pecans, finely minced
kosher salt

Preheat oven to 350°. On 2 baking sheets place 6 mounds of ¼ c. each grated
Parmesan cheese. Spread flat into very thin circles. Sprinkle pecans evenly
onto each crisp and season with salt. Bake 6 to 8 minutes or until golden brown.
Quickly remove from oven and place each cheese circle on a cup of an upside-down
muffin tray to form into a cheese cup. As Parmesan Cheese Cups cool they will
retain a cup-shape.

Balsamic Vinaigrette

¼ c. balsamic vinegar
¼ tsp. kosher salt
1/3 c. olive oil
¼ tsp. coarse black pepper
Combine balsamic vinegar, olive oil, salt and pepper together in a small jar.
When ready to serve, drizzle over Caprese Salad. Enjoy!
