8 ears fresh corn
1/4 c. mayonnaise
1/3 c. grated Parmesan cheese
1/2 tsp. parsley flakes
1 tsp. ground cumin
Bring a large pot of water to a boil. Cut corn on the cob into chunks, (as pictured). Boil corn
for 3 to 4 minutes; remove from water and place corn in a large Ziploc™ bag. In a small bowl,
stir together mayonnaise, Parmesan cheese and parsley flakes. Add Parmesan mixture to
corn. Drizzle lime juice on corn. Seal bag and toss evenly. Sprinkle with cumin and season
to taste. Place in bowl and serve.
