#8 We’re talkin’ Omega-3… the good stuff!

Salmon, is easily the most accessible and familiar of the top fish for omega-3
fatty acids.
Every supermarket carries salmon, and this Pistachio Crusted Salmon
recipe is one of my favorite recipes. It is quick and easy, and feels so gourmet. The best
salmon to eat, to get the most omega-3’s, would be king salmon, also called Chinook
salmon, which are wild-caught from California to Alaska. It is interesting to note,
that canned salmon is also high in this good fat. The leaner sockeyes and silver
salmon are still high in omega-3 fatty acids, just not as high as Chinooks.

Omega-3 fatty acids help you focus, thanks to boosting brain cells and neuro-
transmitters. If you’re not a BIG fan of fish, try taking a daily fish oil capsule
instead. When I was growing up, my Mom made us take cod liver oil everyday!
I remember standing in line with my sisters, plugging our noses and trying
our best NOT TO GAG, and forcing this terrible tablespoon of pure Liquid
Gold down our throats! It was somewhat traumatic, but now I am
appreciative of many of the benefits of that daily dose….

We hear a lot about eating more omega-3 fatty acids these days.  There are so
many new studies that have come out highlighting the important health
benefits to eating this “good fat,” which is found in fatty fish that swim
in cold water. Some of us, remember fish used to be called “brain food.”
Omega-3s are the reason why. They also are a powerful anti-inflammatory
that helps the body heal all sorts of problems, from poor eyesight to
Alzheimer’s disease.

Pistachio Crusted Salmon

12 oz. pistachios
3 lbs. salmon fillet
2 limes
1/3 c. butter, melted

Preheat oven to 350°. Put pistachios in a Ziploc™ bag and crush with a rolling pin. Cut salmon
fillet into single size servings, rinse with water. Cut limes in half and squeeze juice over salmon
pieces and brush with melted butter. Dredge salmon pieces in crushed pistachios. Place on
baking sheet and bake uncovered for 20 minutes. Serve.
