WICKED GOOD Homemade Mac & Cheese

We grew up eating homemade Mac & Cheese….long before it came in a box, and
was just a few easy steps. I think I learned how to make my first roux when my
Mom taught me how to make homemade Mac & Cheese.

 

It may have been where my love affair with food began….and grew into a fascination
with creating wonderful new recipes. But, this old time favorite, is one my
grandchildren love as well. Nothing beats Homemade Mac & Cheese…..
comfort food at it BEST!

 

Wicked Good Mac & Cheese

1 tbsp. olive oil
1 tsp. kosher salt
1 lb. pkg. macaroni
½ c. butter
1/3 c. flour
2 tsp. granulated chicken bouillon
½ tsp. kosher salt
1 tsp. coarse black pepper
3 c. milk
4 c. grated sharp cheddar cheese
2 green onions, garnish.

Preheat oven to 375°. In a large stockpot, bring water to a boil and
add olive oil and salt; stir in macaroni. Cook according to directions
on package. Drain, rinse and set aside.

 Melt butter in a medium-size pot and whisk in flour, bouillon, salt and
pepper. Slowly whisk in milk. Cook for 2 to 3 minutes. Fold in cheese
and blend until smooth.

Pour over cooked macaroni and stir to evenly coat. Place in individual
containers or a 9 x 13 pan prepared with cooking spray and bake for
45 minutes or until cheese begins to brown around the edges. Bake
smaller servings for less time; watch for cheese to crisp around the
edges. Garnish with diced green onions when ready to serve.
