    Fried Tomato Sandwiches

    ¼ c. butter
    3-4 ripe tomatoes
    3-4 tbsp. sugar
    salt and pepper
    1 baguette cut into ¼ inch slices (20 slices)
    5 oz. cream cheese

    Melt butter in a skillet. Place diced tomatoes in skillet and sprinkle with half of the sugar, salt and pepper. Sauté for 4 to 5 minutes; turn over and sprinkle with remaining sugar, salt and pepper. Sauté for an additional 4 to 5 minutes. If tomatoes seem too juicy, continue to sauté on low heat until sauce thickens.

    Place baguette slices on a jelly roll pan and broil both sides until golden. Spread each slice with softened cream cheese and return to oven until cream cheese bubbles. Spread fried tomato sauce over open faced toasted baguettes.

  15. Cream of Mushroom Soup - Volume Two

    Cream of Mushroom

    4 c. sliced mushrooms
    1 c. butter, divided
    1-1¼ c. flour
    ½ tsp. coarse black pepper
    2 tbsp. granulated chicken bouillon
    1 pt. heavy cream
    8 c. 2% milk
    4 green onions

    Take 1 c. of sliced mushrooms and set aside. In a large soup pot melt ¼ c. of butter. Finely chop 3 c. of mushrooms and sauté until mushrooms darken in color. Add ½ c. of butter.

    Fold in flour, pepper and bouillon, creating a roux. Scorch the roux to deepen the flavor, stirring constantly on medium heat. Slowly whisk in the cream and milk to desired consistency. Soup will thicken as it cooks. To thin down soup, fold in more milk. Add half of the diced green onions.

    In a separate pan, sauté 1 c. of sliced mushrooms with ¼ c. of butter to use as a garnish. When ready to serve, top with sautéed mushroom slices and diced green onions.

    Helpful Hint: To reheat soup make sure not to bring to a boil or the soup will separate.

  16. Honey Glazed Walnut Rolls - Volume Two

    Honey Glazed Walnut Rolls

    Honey Glazed Walnut Rolls

    2 pkgs. active dry yeast (2 ¼ tbsp. ea.)
    2 c. warm water
    ⅓ c. sugar
    ⅓ c. butter
    2 ½ tsp. salt
    ⅔ c. nonfat dry milk
    5-6 c. flour
    1 egg

    In a bowl using an electric mixer, combine yeast and water. Let stand 5 minutes. Add sugar, butter, salt, dry milk, 2 c. flour and egg. Beat together until smooth. Add 3 ½ c. of flour, one cup at a time and beat until smooth. Turn dough onto a lightly floured surface and knead until smooth. Brush dough with butter and return to bowl. Let rise in a warm place until it triples in size.

    Dust surface with flour for rolling and shaping dough. Cut or mold into desired shapes. Place on greased baking sheets. Brush surface of rolls with melted butter. Let rise in warm place for 1½ hours. Preheat oven to 400°. Bake rolls for 10 minutes, remove from oven, cover with Honey Walnut Glaze. Return rolls to oven and bake for an additional 10 minutes or until golden brown.

    Honey Walnut Glaze

    ½ c. honey
    ⅓ c. granulated sugar
    ¼ c. finely chopped walnuts
    3 tbsp. butter
    ⅛ tsp. ground cinnamon

    Mix ingredients together and heat. Do not boil. Remove from heat and slightly cool. Bake rolls for 10 minutes.

    Take out of oven and spoon on Honey Walnut Glaze. Return to oven and bake rolls for an additional 10 minutes or until golden brown.

  17. Caprese Ravioli - Volume Five

    Caprese Ravioli

    Caprese Ravioli

    20 oz. three cheese ravioli or lobster or crab filled ravioli
    ¼ c. olive oil
    2 egg whites
    1 c. grated fresh Parmesan cheese
    ½ tsp. onion salt
    ½ tsp. garlic salt

    Bring a pot of water to a boil. Drop ravioli in boiling water and cook for 4 to 5 minutes; remove and pat dry.

    Separate egg whites into a bowl and beat with a fork. Combine cheese, onion salt and garlic salt together in a small bowl. Dip each ravioli in egg whites and then in cheese mixture; repeat.

    Heat olive oil in a skillet on high. Lightly fry each ravioli, turning 2 to 3 times, or until crisp. Serve over Mediterranean Tomato Sauce.

    Mediterranean Tomato Sauce

    10 Roma tomatoes
    ¼ c. butter
    3 tbsp. olive oil
    ½ c. sugar
    2 tsp. kosher salt
    1 tsp. coarse black pepper
    1 tsp. garlic powder
    1 tsp. dried oregano
    1 tsp. dried thyme

    Chop tomatoes into small pieces. Melt butter in medium-size stockpot over medium heat; add olive oil and chopped tomatoes. Sprinkle tomatoes with sugar, salt and pepper.

    Stirring occasionally, sauté tomatoes for 10 to 15 minutes. Stir in garlic, oregano and thyme. If tomato sauce appears too juicy, continue to cook until desired thickness is achieved. Serve under Fried Ravioli and top with Fresh Caprese Salad.

    Caprese Salad

    2 c. cherry tomatoes
    ½ c. fresh minced basil
    3 c. small mozzarella balls
    balsamic vinegar, for garnish

    Slice cherry tomatoes in half. Toss basil, mozzarella balls and tomatoes together and place on top of Fried Ravioli. Drizzle with balsamic vinegar. Serve.

  18. Bacon Wrapped Turkey - Tenderloins Volume Six

    Bacon Wrapped Turkey Tenderloins

    Bacon Wrapped Turkey Tenderloins

    olive oil
    2 tsp. dried rosemary
    1 tsp. garlic pepper
    6 1 lb. turkey tenderloins
    2 lbs. bacon slices

    Preheat oven to 325°. In a large stockpot, heat olive oil, rosemary and garlic pepper on high. Sear turkey tenderloins on all sides to seal in the natural juices and place on a jelly roll pan. Set stockpot aside to make Turkey Gravy after tenderloins are cooked.

    Wrap 3 or 4 slices of bacon under the turkey tenderloins and tie on top (as pictured). Bake tenderloins until thermometer inserted near center registers 160°, approximately 45 minutes.

    Monster Mash Guac & Chips

    2 ripe avocados
    ½ red onion
    2 tbsp. cilantro
    1 lime, juice
    ½ tsp. kosher salt
    ½ tsp. coarse black pepper
    1 jalapeno pepper
    1 sm. zucchini, cored and minced
    1 11 oz. pkg. blue corn tortilla chips

    Cut avocados in half. Remove pit. Scoop out avocado from the peel and place in mixing bowl. Using a fork, roughly mash the avocado. Peel and dice onion and finely chop cilantro. Slice lime in half and squeeze juice over avocado. Add onion, cilantro, salt and pepper.

    Remove stem and dice half of jalapeno pepper with seeds. Fold into guacamole. Add remaining diced jalapeno with or without seeds depending on desired heat. Core and finely mince zucchini and fold into Monster Mash Guac.

    Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air. Refrigerate. Serve with blue corn tortilla chips (as pictured).

  20. Sugar Star Cookies - Volume Six

    Sugar Star Cookies

    ½ c. butter, softened
    ½ c. shortening
    ½ c. sugar
    ½ c. powdered sugar
    1 egg, whisked
    1 tsp. pure vanilla extract
    2 ¼ c. flour
    ½ tsp. cream of tartar
    ½ tsp. kosher salt
    ½ tsp. baking soda

    Preheat oven to 350°. In a mixing bowl blend butter, shortening and both sugars together, until creamy. Fold in egg and vanilla.

    In a separate bowl, whisk all dry ingredients together. Combine with butter mixture and blend well. Roll dough out ¼ to ½-inch thick and cut into stars using a star shaped cookie cutter, or desired shape. Place on jelly roll pan sprayed with cooking spray. Bake for 6 to 8 minutes. Place on cookie rack to cool.

    Butter Cream Frosting

    6 oz. cream cheese
    1 c. butter, softened
    2 tsp. pure vanilla extract
    4 c. powdered sugar
    1 c. sliced strawberries, garnish
    ½ c. fresh blackberries, garnish

    Place cream cheese and butter in a bowl. Using an electric mixer beat for 2 to 3 minutes. Add vanilla and powdered sugar. Whip until light and fluffy. Rinse and dry berries. Frost cookies and top with strawberries and blackberries (as pictured).
